For the Topping:
- 1 cup Georgia pecans, chopped

- 1 cup brown sugar (packed)
- 2 tablespoons heavy cream
- 1 teaspoon vanilla extract
- Pinch of salt
For the Cake:
- 1 ½ cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup milk
- ¼ teaspoon almond extract (optional)
Instructions
- Prepare the Topping:
Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
In a medium saucepan, melt the butter over medium heat. Stir in brown sugar, heavy cream, vanilla extract, and a pinch of salt. Bring to a simmer, stirring occasionally, for 2-3 minutes until the sugar has dissolved and the mixture is smooth.
Pour the caramel mixture into the bottom of the prepared cake pan. Sprinkle the chopped Georgia pecans evenly over the caramel sauce. - Prepare the Cake:
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla and almond extract (if using).
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined. - Assemble the Cake:
Pour the cake batter over the pecan mixture in the pan, spreading it evenly. - Bake the Cake:
Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean. - Flip the Cake:
Allow the cake to cool in the pan for 5-10 minutes. Run a knife around the edges to loosen it, then carefully invert the cake onto a plate. Let it sit for a few minutes, then remove the cake pan. - Serve & Enjoy:
Serve warm or at room temperature. Slice and enjoy the perfect combination of soft cake and caramelized pecans!
