Ingredients

Scale

For the Wafers:

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 cup heavy cream (or milk)
  • 1 teaspoon vanilla extract

For the Cream Filling:

  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • Red food coloring (optional, for a festive touch)

Instructions

  1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Make the Cookie Dough:
In a large bowl, cream together the softened butter and sugar until light and fluffy. Add the salt, vanilla extract, and heavy cream, mixing until smooth. Gradually add the flour, mixing until the dough comes together and is smooth.
  3. Roll Out the Dough:
Lightly flour your work surface and rolling pin. Roll out the dough to about 1/8-inch thickness.
  4. Cut the Wafers:
Use a heart-shaped cookie cutter (or any other shape you prefer) to cut out the cookies. Place them onto the prepared baking sheets, spacing them about 1 inch apart.
  5. Bake the Wafers:
Bake for 10-12 minutes or until the edges are lightly golden. Remove from the oven and allow the cookies to cool completely on a wire rack.
  6. Make the Cream Filling:
In a medium bowl, beat the softened butter until smooth. Gradually add the powdered sugar and vanilla extract, beating until the filling is light and fluffy. Add a few drops of red food coloring to create a festive pink or red filling, if desired.
  7. Assemble the Wafers:
Once the cookies have cooled, spread a small amount of cream filling onto the flat side of one cookie. Top with another cookie, pressing gently to form a sandwich.
  8. Serve and Enjoy:
Serve the Valentine cream wafers on their own, or package them up in a cute box or jar for a homemade gift.

Notes

  • The dough can be rolled out ahead of time and stored in the fridge for up to 1 hour before cutting and baking.
  • For extra flair, you can dust the finished cookies with powdered sugar or add a few colorful sprinkles to the cream filling.
  • If you prefer, you can use any type of cookie cutter to make these wafers even more personalized (stars, circles, etc.).
  • These wafers also freeze well! Simply wrap them tightly in plastic wrap or place in an airtight container.
