Ingredients
Scale
For the cookies:
- 2 ½ cups all-purpose flour
- 1 tsp baking soda
- ¼ tsp salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tbsp lemon zest
- 2 tbsp fresh lemon juice
- 1 tsp vanilla extract
For the frosting:
- 1 ½ cups powdered sugar
- 2 tbsp unsalted butter, softened
- 1–2 tbsp fresh lemon juice
- ½ tsp vanilla extract
- Pinch of salt
- Optional: Pink or red food coloring (for a Valentine’s touch)
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
- Prepare the dry ingredients: In a bowl, whisk together the flour, baking soda, and salt. Set aside.
- Make the cookie dough: In a large bowl, cream the softened butter and granulated sugar together until light and fluffy. Add the egg, lemon zest, lemon juice, and vanilla extract. Mix until well combined.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until fully combined and a dough forms.
- Shape the cookies: Roll tablespoon-sized balls of dough and place them onto the prepared baking sheet, spacing them about 2 inches apart. Slightly flatten each cookie with your hand or the bottom of a glass.
- Bake: Bake for 8-10 minutes, or until the edges are golden but the centers are still soft. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Make the frosting: In a medium bowl, beat together the powdered sugar, softened butter, lemon juice, vanilla extract, and a pinch of salt until smooth. If you want a pink hue, add a drop of food coloring.
- Frost the cookies: Once the cookies are completely cooled, spread the frosting on top of each cookie. For extra flair, top with sprinkles or decorative heart-shaped toppings.
- Serve: Enjoy your sweet and tangy Valentine Frosted Lemon Cookies with a cup of tea or as a delightful gift!
Notes
- Make sure the cookies are completely cooled before frosting, or the frosting may melt.
- You can make the dough ahead of time and refrigerate it for up to 24 hours before baking.
- If you prefer, you can substitute the lemon juice and zest for orange or lime for a different citrus flavor.
