For the Cookies:

  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 large egg yolk

For the Jam Filling:

  • 1/2 cup strawberry jam (or your preferred fruit jam like raspberry, apricot, or cherry)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Make the Cookie Dough:
    • In a large mixing bowl, cream together the softened butter and powdered sugar using an electric mixer until light and fluffy, about 3-4 minutes.
    • Add the vanilla extract and egg yolk, and mix until well combined.
    • Gradually add the dry ingredients to the butter mixture, mixing until just combined. Be careful not to overwork the dough.
  4. Roll and Cut the Dough:
    • Divide the dough into two portions. Roll one portion of the dough out onto a lightly floured surface to about 1/8 inch thick.
    • Use a heart-shaped cookie cutter to cut out as many heart shapes as you can. Place the cutouts on the prepared baking sheet.
    • For the remaining dough, roll it out again and cut out the same number of hearts, but this time use a smaller heart-shaped cutter (or another shape) to cut a small hole in the center of each cookie.
  5. Bake the Cookies:
    • Bake the cookies for 8-10 minutes or until the edges are just beginning to turn golden. The cookies should remain light in color, so be careful not to overbake.
    • Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  6. Assemble the Cookies:
    • Once the cookies are fully cooled, spread a small amount of strawberry jam (or your choice of jam) on the center of the whole heart-shaped cookies.
    • Place the cookies with the cut-out centers on top of the jam-covered cookies, sandwiching them together.
  7. Dust with Powdered Sugar (Optional):
    • Once assembled, lightly dust the tops of the cookies with powdered sugar for a festive touch.

Notes

  • You can use any type of jam you prefer for the filling—raspberry, apricot, or cherry all work beautifully for these cookies.
  • If the dough becomes too soft to handle, chill it in the fridge for 15-20 minutes before rolling it out.
