For the Cookies:

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, and mix until combined.
- In a separate bowl, whisk together the flour, baking soda, salt, and freeze-dried strawberry powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop tablespoon-sized portions of dough and roll them into balls, placing them on the prepared baking sheet.
- Flatten each dough ball slightly with your fingers or the back of a spoon.
- Bake for 8-10 minutes, or until the edges of the cookies are lightly golden.
- Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- While the cookies cool, prepare the glaze by mixing the powdered sugar, milk, vanilla extract, and freeze-dried strawberry powder until smooth.
- Once the cookies are cool, drizzle the strawberry glaze over the top and add sprinkles if desired.
- Allow the glaze to set before serving.
Notes
- You can use fresh strawberries instead of freeze-dried, but the texture of the dough might be slightly different.
- For an extra touch, add a few white chocolate chips or chopped nuts into the cookie dough before baking.
