Description

For the Cookies:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour

  • 1/2 cup freeze-dried strawberries, crushed into powder

For the Glaze:

  • 1/2 cup powdered sugar
  • 1 tablespoon milk (or more to achieve desired consistency)
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon freeze-dried strawberries, crushed into powder
  • Sprinkles (optional, for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, and mix until combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and freeze-dried strawberry powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop tablespoon-sized portions of dough and roll them into balls, placing them on the prepared baking sheet.
  7. Flatten each dough ball slightly with your fingers or the back of a spoon.
  8. Bake for 8-10 minutes, or until the edges of the cookies are lightly golden.
  9. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  10. While the cookies cool, prepare the glaze by mixing the powdered sugar, milk, vanilla extract, and freeze-dried strawberry powder until smooth.
  11. Once the cookies are cool, drizzle the strawberry glaze over the top and add sprinkles if desired.
  12. Allow the glaze to set before serving.

Notes

  • You can use fresh strawberries instead of freeze-dried, but the texture of the dough might be slightly different.
  • For an extra touch, add a few white chocolate chips or chopped nuts into the cookie dough before baking.
