For the Pastry:

  • 2 1/2 cups all-purpose flour
  • 1 tbsp granulated sugar

  • 1/2 cup raspberry jam (or mixed berry jam)
  • 1/2 cup strawberry jam

For the Glaze (Optional):

  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract
  • Red food coloring (optional)

Instructions

  1. Make the Pastry:
    • In a large bowl, mix the flour, sugar, and salt.
    • Add the cold cubed butter and use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs.
    • Gradually add the ice water and mix until the dough starts to come together. If needed, add more water, a tablespoon at a time.
    • Divide the dough in half, shape each into a disc, and wrap in plastic wrap. Chill in the refrigerator for at least 30 minutes.
  2. Prepare the Filling:
    • In a small bowl, combine the raspberry and strawberry jams. Stir until well mixed.
  3. Assemble the Pop-Tarts:
    • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
    • Roll out one of the dough discs on a floured surface to about 1/8 inch thick. Cut into rectangles (about 3×4 inches).
    • Place half of the rectangles on the prepared baking sheet.
    • Spoon a generous tablespoon of the berry jam mixture onto each rectangle, leaving a small border around the edges.
    • Roll out the second dough disc and cut into rectangles to match the first set. Place these over the filled rectangles and press the edges to seal. Use a fork to crimp the edges and create a decorative pattern.
    • Use a sharp knife to make a few small slits on top of each pop-tart to allow steam to escape while baking.
  4. Bake the Pop-Tarts:
    • Bake the pop-tarts for 18-20 minutes, or until golden brown.
    • Let them cool on a wire rack.
  5. Prepare the Glaze (Optional):
    • In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
    • Add a few drops of red food coloring if desired for a festive touch.
    • Drizzle the glaze over the cooled pop-tarts.
