Ingredients
Scale
For the Pastry:
- 2 1/2 cups all-purpose flour
- 1 tbsp granulated sugar
- 1/2 tsp salt
- 1 cup unsalted butter, cold and cubed
- 1/4 cup ice water (more if needed)
For the Filling:
- 1/2 cup raspberry jam (or mixed berry jam)
- 1/2 cup strawberry jam
For the Glaze (Optional):
- 1 cup powdered sugar
- 2 tbsp milk
- 1/2 tsp vanilla extract
- Red food coloring (optional)
Instructions
- Make the Pastry:
- In a large bowl, mix the flour, sugar, and salt.
- Add the cold cubed butter and use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs.
- Gradually add the ice water and mix until the dough starts to come together. If needed, add more water, a tablespoon at a time.
- Divide the dough in half, shape each into a disc, and wrap in plastic wrap. Chill in the refrigerator for at least 30 minutes.
- Prepare the Filling:
- In a small bowl, combine the raspberry and strawberry jams. Stir until well mixed.
- Assemble the Pop-Tarts:
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out one of the dough discs on a floured surface to about 1/8 inch thick. Cut into rectangles (about 3×4 inches).
- Place half of the rectangles on the prepared baking sheet.
- Spoon a generous tablespoon of the berry jam mixture onto each rectangle, leaving a small border around the edges.
- Roll out the second dough disc and cut into rectangles to match the first set. Place these over the filled rectangles and press the edges to seal. Use a fork to crimp the edges and create a decorative pattern.
- Use a sharp knife to make a few small slits on top of each pop-tart to allow steam to escape while baking.
- Bake the Pop-Tarts:
- Bake the pop-tarts for 18-20 minutes, or until golden brown.
- Let them cool on a wire rack.
- Prepare the Glaze (Optional):
- In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
- Add a few drops of red food coloring if desired for a festive touch.
- Drizzle the glaze over the cooled pop-tarts.
Notes
- Storage: Store the pop-tarts in an airtight container at room temperature for up to 3 days.
- Freezing: You can freeze the unbaked pop-tarts before glazing. Place them on a baking sheet, freeze until firm, then transfer to a freezer-safe container. Bake from frozen at 375°F (190°C) for 20-25 minutes.
- Flavor Variations: Feel free to switch up the jam flavors to your preference—apricot, cherry, or blueberry are great options!
- Dough Tip: Make sure the butter is cold when you make the dough to achieve a flaky texture.
