Description

This Valentine’s Day Caramel Popcorn Cake is a delightful combination of crunchy popcorn, sweet caramel, and festive decorations. It’s a show-stopping dessert or snack to share with your loved ones on this special day!

Ingredients

Scale

For the Popcorn:

  • 10 cups popped popcorn (about 1/2 cup unpopped kernels)
  • 1/2 cup unsalted butter
  • 1 cup packed brown sugar
  • 1/4 cup light corn syrup
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking soda

For the Decorations:

  • 1/2 cup white chocolate chips (for drizzling)
  • 1/4 cup red and pink sprinkles (or heart-shaped sprinkles)
  • 1/4 cup mini chocolate chips (optional)
  • 1/4 cup Valentine’s Day candy (e.g., mini chocolate hearts, candy hearts, etc.)

Instructions

  1. For the Popcorn:

    1. Pop the Popcorn:
      • Pop the popcorn kernels using your preferred method (air-popper, stovetop, or microwave). Once popped, set aside in a large mixing bowl. Make sure to remove any unpopped kernels before using the popcorn.
    2. Make the Caramel Sauce:
      • In a medium saucepan over medium heat, melt the butter. Stir in the brown sugar, corn syrup, and salt. Bring the mixture to a boil while stirring constantly. Once it begins to boil, stop stirring and let it cook for 4-5 minutes without stirring, allowing the caramel to thicken slightly.
    3. Add Vanilla and Baking Soda:
      • Remove the caramel from the heat and stir in the vanilla extract and baking soda. The mixture will bubble up, which is normal.
    4. Coat the Popcorn:
      • Immediately pour the caramel over the popped popcorn. Use a spatula or spoon to gently toss the popcorn to coat it evenly with the caramel. Be careful as the caramel will be hot!
    5. Form the Cake:
      • Grease or line a 9-inch round cake pan with parchment paper, and then pour the caramel-coated popcorn into the pan, pressing it down gently to form a “cake” shape. You can also shape it into a heart shape on a large plate for a more festive look, if preferred.
    6. Let It Cool:
      • Allow the popcorn cake to cool and set for at least 1 hour. As it cools, the caramel will harden, creating a crispy, crunchy texture.

    For the Decorations:

    1. Melt the White Chocolate:
      • In a microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring after each interval until smooth.
    2. Decorate the Cake:
      • Drizzle the melted white chocolate over the caramel popcorn cake using a spoon or piping bag. Be creative with your drizzle design!
      • Sprinkle the red and pink sprinkles, mini chocolate chips, and any Valentine’s Day candy you like over the top while the chocolate is still soft.
    3. Chill to Set:
      • Place the decorated cake in the refrigerator for about 15 minutes to allow the chocolate to set completely.
    4. Serve:
      • Once the chocolate has hardened, your Valentine’s Day Caramel Popcorn Cake is ready to serve! Slice it like a traditional cake or break it into pieces to share.

Notes

  • If you don’t have a cake pan, you can shape the popcorn into a heart or another fun shape directly on a lined baking sheet or large plate.
  • For extra indulgence, drizzle some melted milk or dark chocolate over the cake along with the white chocolate drizzle.
  • The caramel popcorn cake can be stored in an airtight container for up to 3 days at room temperature.
