Description

This Valentine’s Day Hot Chocolate Ice Box Pie is a dreamy no-bake dessert that’s perfect for cozying up with your loved ones. Featuring a rich hot chocolate flavor, a fluffy whipped cream topping, and a crunchy graham cracker crust, it’s the ultimate Valentine’s treat!

Ingredients

Scale

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Hot Chocolate Filling:

  • 1 package (3.4 oz) instant chocolate pudding mix
  • 2 cups whole milk
  • 1/2 cup hot chocolate mix (such as Swiss Miss)
  • 1 tsp vanilla extract
  • 1/2 cup heavy whipping cream, cold

For the Topping:

  • 1 cup heavy whipping cream, cold
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • Mini marshmallows (for garnish, optional)
  • Shaved chocolate or chocolate curls (optional, for garnish)

Instructions

  1. Prepare the Crust:
    • In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture is well combined and the crumbs are evenly coated in butter.
    • Press the mixture into the bottom and up the sides of a 9-inch pie pan.
    • Refrigerate the crust for at least 30 minutes to set while you prepare the filling.
  2. Make the Hot Chocolate Filling:
    • In a large bowl, whisk together the instant chocolate pudding mix, milk, and hot chocolate mix until fully combined. Let the mixture sit for 5 minutes to thicken.
    • In a separate bowl, beat the cold heavy whipping cream until soft peaks form.
    • Gently fold the whipped cream into the pudding mixture, being careful not to deflate the whipped cream. Once combined, pour the filling into the prepared graham cracker crust. Smooth the top with a spatula.
  3. Chill the Pie:
    • Refrigerate the pie for at least 4 hours, or preferably overnight, to allow it to fully set.
  4. Prepare the Topping:
    • Once the pie is set, beat the heavy whipping cream, powdered sugar, and vanilla extract in a chilled bowl until stiff peaks form.
    • Spread the whipped cream topping evenly over the pie, covering the entire surface.
  5. Garnish and Serve:
    • Garnish the pie with mini marshmallows and shaved chocolate or chocolate curls for an extra festive touch.
    • Slice and serve chilled!

Notes

  • For an extra rich flavor, you can add a tablespoon of cocoa powder to the filling mixture.
  • This pie can be made up to 2 days ahead of time, which makes it perfect for stress-free Valentine’s Day entertaining.
  • If you want to make the pie a bit more decadent, you can add a layer of chocolate ganache over the crust before adding the filling.
