  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • 23 tbsp water (for desired consistency)
  • Fresh parsley or cilantro, for garnish (optional)
  • Pomegranate seeds, for garnish (optional)

Instructions

  1. Roast or Boil the Beet:
    • Preheat your oven to 400°F (200°C). Wrap the beet in foil and roast for 45-60 minutes, or until tender when pierced with a fork. Alternatively, you can boil the beet for 30-40 minutes until tender. Once cooked, allow the beet to cool, then peel and cut into chunks.
  2. Blend the Ingredients:
    • In a food processor, combine the roasted beet, chickpeas, tahini, lemon juice, olive oil, garlic, cumin, salt, and pepper. Process until smooth, adding water 1 tablespoon at a time until you reach your desired consistency.
  3. Taste and Adjust:
    • Taste the hummus and adjust seasoning if needed. You can add more lemon juice, salt, or cumin for extra flavor.
  4. Serve:
    • Transfer the hummus to a serving bowl, drizzle with a little olive oil, and garnish with fresh parsley or cilantro and pomegranate seeds if desired for a festive touch.
  5. Enjoy!
    • Serve with pita bread, fresh veggies, or crackers. This hummus is perfect for Valentine’s Day parties or as a healthy snack.
