Ingredients
For the Cookie Bars:
- 2 1/2 cups all-purpose flour
- 1 tbsp cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tbsp red food coloring
- 1/2 cup sour cream
- 1 cup semi-sweet chocolate chips
For the Cream Cheese Frosting (optional but recommended):
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Prepare the Cookie Bars:
- Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg, vanilla extract, and red food coloring. Mix until fully combined.
- Slowly add the dry ingredients to the wet ingredients, mixing until combined.
- Stir in the sour cream until the batter is smooth, and then fold in the chocolate chips.
- Bake the Cookie Bars:
- Spread the batter evenly into the prepared baking pan, pressing it down to smooth the top.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Remove from the oven and allow the bars to cool in the pan on a wire rack.
- Make the Cream Cheese Frosting (optional):
- While the cookie bars are cooling, beat together the softened cream cheese and butter in a medium bowl until smooth and creamy.
- Gradually add the powdered sugar and vanilla extract, and continue to beat until fluffy.
- Once the cookie bars are completely cooled, spread the cream cheese frosting evenly over the top. (If you prefer, you can leave the frosting off and enjoy the cookie bars without it.)
- Serve and Enjoy:
- Once frosted (if desired), cut the cookie bars into squares or rectangles. Serve and enjoy!

- If you prefer a different frosting, you can opt for a simple buttercream frosting instead of the cream cheese frosting.
