For the Muffins:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon (optional)
- 1 large egg
- 1 cup buttermilk (or milk with 1 tbsp vinegar, let sit for 5 minutes)
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla extract
- 1 1/2 cups fresh strawberries, chopped
- 1/2 cup white or semi-sweet chocolate chips (optional, for added sweetness)
For the Topping (optional):
- 2 tbsp sugar (for sprinkling)
- 1 tbsp chopped fresh strawberries (for garnish)
Instructions
- Preheat the Oven:
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly with butter or non-stick spray.
- Prepare the Dry Ingredients:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon (if using). Set aside.
- Prepare the Wet Ingredients:
- In a separate bowl, whisk together the egg, buttermilk, melted butter, and vanilla extract until smooth and well combined.
- Combine the Wet and Dry Ingredients:
- Pour the wet ingredients into the dry ingredients and stir gently with a spoon or spatula. Mix until just combined; do not overmix. The batter will be slightly lumpy.
- Fold in the Strawberries:
- Gently fold in the chopped strawberries and chocolate chips (if using), being careful not to crush the berries.
- Fill the Muffin Tin:
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. If you’d like a bit of extra sweetness and crunch, sprinkle a little sugar on top of each muffin before baking.
- Bake the Muffins:
- Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. The muffins should be golden brown on top.
- Cool and Serve:
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Optionally, garnish with chopped strawberries for a festive touch.

- Serve warm for a fresh, fruity breakfast or snack, or store in an airtight container for up to 3 days.
Notes
- If fresh strawberries are not in season, you can substitute with frozen strawberries. Just make sure to thaw and drain any excess liquid before adding them to the batter.
- You can also make these muffins ahead of time and freeze them. Just warm them up in the microwave or oven before serving.
