  • 2 cups all-purpose flour

  • 1 1/2 cups fresh strawberries, chopped
  • 1/2 cup white or semi-sweet chocolate chips (optional, for added sweetness)

For the Topping (optional):

  • 2 tbsp sugar (for sprinkling)
  • 1 tbsp chopped fresh strawberries (for garnish)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly with butter or non-stick spray.
  2. Prepare the Dry Ingredients:
    • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon (if using). Set aside.
  3. Prepare the Wet Ingredients:
    • In a separate bowl, whisk together the egg, buttermilk, melted butter, and vanilla extract until smooth and well combined.
  4. Combine the Wet and Dry Ingredients:
    • Pour the wet ingredients into the dry ingredients and stir gently with a spoon or spatula. Mix until just combined; do not overmix. The batter will be slightly lumpy.
  5. Fold in the Strawberries:
    • Gently fold in the chopped strawberries and chocolate chips (if using), being careful not to crush the berries.
  6. Fill the Muffin Tin:
    • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. If you’d like a bit of extra sweetness and crunch, sprinkle a little sugar on top of each muffin before baking.
  7. Bake the Muffins:
    • Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. The muffins should be golden brown on top.
  8. Cool and Serve:
    • Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Optionally, garnish with chopped strawberries for a festive touch.

Notes

  • If fresh strawberries are not in season, you can substitute with frozen strawberries. Just make sure to thaw and drain any excess liquid before adding them to the batter.
  • You can also make these muffins ahead of time and freeze them. Just warm them up in the microwave or oven before serving.
