Valentine’s Day Strawberry Scones are soft, buttery, and bursting with fresh strawberries. With a slight sweetness and a touch of creaminess, they’re the perfect treat for your loved ones on this special day. Add a drizzle of glaze for extra sweetness and a festive touch!

For the Scones:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup (1 stick) unsalted butter, cold and cubed
- 2/3 cup heavy cream (plus extra for brushing)
- 1 large egg
- 1 tsp vanilla extract
- 3/4 cup fresh strawberries, diced
- 1 tbsp lemon zest (optional, for added brightness)
For the Glaze (optional):
- 1/2 cup powdered sugar
- 1 tbsp milk
- 1/2 tsp vanilla extract
- 1–2 tbsp finely chopped strawberries (optional, for color)
Instructions
- Preheat & Prepare:
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper and set it aside.
- Make the Scone Dough:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs (some larger pea-sized pieces of butter are okay).
- In a separate small bowl, whisk together the heavy cream, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir gently until the dough just comes together. Be careful not to overwork the dough.
- Fold in the diced strawberries and lemon zest (if using).
- Shape the Scones:
- Turn the dough onto a lightly floured surface and gently knead it a few times to bring it together.
- Pat the dough into a disc about 1-inch thick.
- Using a sharp knife or pizza cutter, slice the dough into 8 wedges. Alternatively, you can use a round cutter for a more traditional scone shape.
- Brush with Cream & Bake:
- Place the scones onto the prepared baking sheet.
- Brush the tops of the scones with a little extra heavy cream for a golden finish.
- Bake the scones for 15-18 minutes, or until they are golden brown on the edges and a toothpick inserted into the center comes out clean.
- Let the scones cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Prepare the Glaze:
- In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
- If you’d like a touch of strawberry flavor, add 1-2 tbsp of finely chopped fresh strawberries into the glaze for extra color and sweetness.
- Glaze & Serve:
- Once the scones are cooled, drizzle the glaze over the top.
- Serve the scones with a cup of tea or coffee for a delicious Valentine’s Day treat!
Notes
- Storage: These scones are best eaten the day they’re made, but you can store them in an airtight container at room temperature for up to 2 days.
- Freezing: You can freeze the unbaked scones. Freeze them on a baking sheet until solid, then transfer them to a freezer bag. When you’re ready to bake, simply add 3-5 extra minutes to the baking time.
- Berry Substitution: If strawberries aren’t available, you can substitute them with raspberries or blueberries.
- Dairy-Free: You can replace the heavy cream with a non-dairy alternative (like coconut cream) and use a plant-based butter for a dairy-free version.
