- 1 cup unsalted butter (2 sticks)
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup red and pink candy melts or chocolate chips
- Valentine’s Day sprinkles (optional)
Instructions
- Pop the Popcorn:
Pop the popcorn using your preferred method (air-popped or stovetop) and place it in a large bowl, making sure to remove any unpopped kernels. - Make the Sweet Glaze:
In a medium saucepan, melt the butter over medium heat. Once melted, add the granulated sugar and light corn syrup. Stir the mixture and bring it to a boil. Allow it to boil for 4-5 minutes without stirring. Then remove from heat and stir in the vanilla extract, baking soda, and salt. The mixture will bubble up – that’s normal! - Coat the Popcorn:
Immediately pour the glaze over the popped popcorn, gently stirring to coat the popcorn evenly. Be sure to do this quickly, as the glaze will harden as it cools. - Bake the Popcorn:
Preheat your oven to 250°F (120°C). Spread the coated popcorn in an even layer on a baking sheet lined with parchment paper. Bake for 30 minutes, stirring every 10 minutes to ensure even coating. - Add the Chocolate Coating:
While the popcorn is baking, melt the red and pink candy melts or chocolate chips in the microwave in 20-second intervals, stirring in between, until fully melted and smooth. - Finish the Popcorn:
Once the popcorn is done baking, remove it from the oven and allow it to cool slightly. Drizzle the melted candy melts or chocolate over the popcorn and sprinkle with Valentine’s Day sprinkles. - Let It Set:
Allow the popcorn to cool completely on the baking sheet. The chocolate will harden as it cools. - Serve and Enjoy:
