Instructions

  1. Prepare the Cheesecake Filling:

    • Stir in graham cracker crumbs to the mixture until a dough-like consistency is formed.
  2. Shape the Truffles:
    • Scoop out small portions of the cheesecake mixture (about 1 tablespoon each) and roll them into balls. Place the balls on a parchment-lined baking sheet.
    • Refrigerate the truffles for at least 1 hour, or until firm enough to dip in chocolate.
  3. Melt the Chocolate:
    • In a heatproof bowl, melt the semi-sweet chocolate with coconut oil or vegetable oil over a double boiler or in the microwave, stirring until smooth.
  4. Coat the Truffles:
    • Once the truffles are firm, dip each one into the melted chocolate, using a fork to roll and coat them evenly. Gently tap the fork against the side of the bowl to remove excess chocolate.
