For the Graham Cracker Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Brownie Layer:

  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/2 cup mini chocolate chips

For the S’mores Topping:

  • 1 cup mini marshmallows
  • 1/4 cup chocolate chips (optional, for drizzling)
  • 1/4 cup crushed graham crackers (optional, for garnish)

Instructions

  1. Prepare the Graham Cracker Crust:
    • Preheat your oven to 350°F (175°C).
    • In a medium bowl, mix together graham cracker crumbs, sugar, and melted butter until well combined.
    • Press the mixture into the bottom and up the sides of a 9-inch pie dish to form the crust.
    • Bake for 10 minutes, then remove from the oven and set aside to cool slightly.
  2. Make the Brownie Batter:
    • In a large bowl, whisk together the melted butter and sugar until smooth.
    • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
    • In a separate bowl, whisk together flour, cocoa powder, salt, and baking powder. Gradually fold the dry ingredients into the wet ingredients, mixing until smooth.
    • Stir in the mini chocolate chips.
  3. Assemble the Pie:
    • Pour the brownie batter into the cooled graham cracker crust, spreading it out evenly.
    • Bake for 25-30 minutes, or until a toothpick inserted into the center of the pie comes out with a few moist crumbs (not wet batter).
    • Remove the pie from the oven and let it cool for 10 minutes.
  4. Add the S’mores Topping:
    • Once the pie has cooled for 10 minutes, sprinkle mini marshmallows evenly over the top.
    • Place the pie back in the oven and bake for an additional 5-7 minutes, or until the marshmallows are golden brown and puffed up.
    • Remove from the oven and let the pie cool completely.
  5. Optional Garnishes:
    • If desired, drizzle melted chocolate chips over the top of the pie and sprinkle with crushed graham crackers for added texture and decoration.
