Description

These soft and chewy Valentine’s Sugar Cookie Cake Bars are the perfect sweet treat to celebrate love! With a light, buttery flavor and colorful sprinkles, they make an ideal dessert for any Valentine’s Day celebration.

Ingredients

Scale

For the Cookie Bars:

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)
  • 2 tablespoons milk
  • ½ cup sprinkles (preferably Valentine’s-themed)

For the Frosting:

  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk (adjust for consistency)
  • ½ cup Valentine’s-themed sprinkles (for decoration)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  4. Add the egg, vanilla extract, and almond extract (if using), and mix until combined.
  5. Gradually add the dry ingredients into the wet ingredients, alternating with the milk. Mix until fully incorporated.
  6. Gently fold in the sprinkles, reserving a small amount for topping.
  7. Spread the cookie dough evenly into the prepared baking dish and smooth the top.
  8. Bake for 25-30 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean.
  9. Allow the bars to cool completely in the pan.
  10. While the bars cool, prepare the frosting by beating together the softened butter, powdered sugar, vanilla extract, and milk until smooth and creamy.
  11. Once the bars are cool, spread the frosting evenly over the bars.
  12. Sprinkle the remaining Valentine’s sprinkles on top for decoration.
  13. Slice into squares and serve.

Notes

  • If you prefer a thinner frosting layer, you can reduce the amount of powdered sugar and milk.
  • For extra flavor, you can add a few drops of pink or red food coloring to the frosting to make it festive.
  • These bars can be stored in an airtight container for up to 3 days at room temperature or up to 1 week in the refrigerator.
