For the Cookie Bars:
- 2 ¾ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract (optional)
- 2 tablespoons milk
- ½ cup sprinkles (preferably Valentine’s-themed)
For the Frosting:
- 1 cup unsalted butter, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
- 1–2 tablespoons milk (adjust for consistency)
- ½ cup Valentine’s-themed sprinkles (for decoration)
Instructions
- Preheat the oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
- Add the egg, vanilla extract, and almond extract (if using), and mix until combined.
- Gradually add the dry ingredients into the wet ingredients, alternating with the milk. Mix until fully incorporated.
- Gently fold in the sprinkles, reserving a small amount for topping.
- Spread the cookie dough evenly into the prepared baking dish and smooth the top.
- Bake for 25-30 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean.
- Allow the bars to cool completely in the pan.
- While the bars cool, prepare the frosting by beating together the softened butter, powdered sugar, vanilla extract, and milk until smooth and creamy.
- Once the bars are cool, spread the frosting evenly over the bars.
- Sprinkle the remaining Valentine’s sprinkles on top for decoration.
- Slice into squares and serve.
Notes
- If you prefer a thinner frosting layer, you can reduce the amount of powdered sugar and milk.
- For extra flavor, you can add a few drops of pink or red food coloring to the frosting to make it festive.
- These bars can be stored in an airtight container for up to 3 days at room temperature or up to 1 week in the refrigerator.
