Description

A delicious and hearty meal that’s perfect for a cozy dinner. This vegan twist on the classic stroganoff features rich flavors from vegan ground beef, mushrooms, and a creamy sauce, served over your choice of pasta.


Ingredients

  • 1 pound uncooked pasta noodles of choice
  • 1 tablespoon olive oil
  • 1 pound vegan ground beef
  • 1 teaspoon fresh minced thyme (optional)
  • 1 teaspoon fresh minced rosemary (optional)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh cracked black pepper
  • 5 tablespoons vegan butter
  • 1 1/2 cups diced white onion
  • 5 cloves garlic, minced
  • 1 pound cremini mushrooms, scrubbed and sliced
  • 2 tablespoons all-purpose flour
  • 1 cup vegan beef broth
  • 1 cup plant-based heavy cream or extra creamy non-dairy milk
  • 1 cup vegan sour cream
  • 2 teaspoons vegan Worcestershire sauce
  • Vegan parmesan, for garnish (optional)
  • Fresh minced parsley, for garnish (optional)

Instructions

  • Cook pasta: Cook pasta in lightly salted water until al dente. Drain and set aside.
  • Cook ground beef: Heat olive oil in a large sauté pan over medium heat. Add vegan ground beef and crumble with a wooden spoon or spatula. Season with thyme, rosemary, salt, and pepper. Cook until browned and heated through (5-7 minutes).
  • Sauté onions and mushrooms: Add vegan butter to the sauté pan. Once melted, add onion and cook until translucent (5-6 minutes). Add mushrooms and cook until reduced to half their size and most of the liquid has cooked down (8-12 minutes).
  • Make sauce: Sprinkle flour into the sauté pan and stir until incorporated. Slowly add broth and heavy cream, whisking. Simmer on medium-high heat until sauce thickens (5-10 minutes). Add vegan sour cream and Worcestershire sauce.
  • Combine and serve: Add reserved pasta noodles to the sauce and stir to combine. Taste and adjust seasonings. Serve with vegan parmesan and fresh minced parsley.

Notes

  • Feel free to adjust the seasoning according to your taste.
  • You can substitute the vegan ground beef with lentils or other plant-based proteins if desired.
