Ingredients

  • 2 cups broccoli florets (fresh or frozen, steamed and finely chopped)
  • 1 cup shredded cheddar cheese
  • 1/3 cup breadcrumbs (regular or panko)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper or lightly grease it.
  2. Steam the broccoli until tender, then finely chop or pulse in a food processor until rice-sized.
  3. In a large bowl, combine chopped broccoli, cheddar, breadcrumbs, Parmesan, egg, garlic powder, salt, and pepper. Mix until well combined.
  4. Scoop about 1 tablespoon of mixture and shape into small tots using your hands. Place on prepared baking sheet.
  5. Bake for 20โ€“25 minutes, flipping halfway, until golden and crispy.
  6. Serve warm with ketchup, ranch, or your favorite dipping sauce.
