- 1 lb rigatoni pasta
- 1 lb ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 cups Velveeta cheese, cubed
- 1 cup milk
- 1/2 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Cook rigatoni pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened.
- Add ground beef, season with salt, pepper, and Italian seasoning. Cook until browned and cooked through. Drain excess fat if needed.
- Reduce heat to low, add Velveeta cheese cubes, milk, and heavy cream. Stir continuously until cheese is melted and sauce is smooth.
- Add cooked rigatoni to the cheese sauce and beef mixture. Toss to coat evenly.
- Cook for an additional 2-3 minutes until heated through.
- Garnish with chopped parsley and serve warm.
Notes
- For extra veggies, add sautéed bell peppers or mushrooms with the onions.
- Use low-fat Velveeta or substitute with cheddar cheese for a lighter version.
- Leftovers can be reheated in the microwave or oven.
