  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup maraschino cherry juice (from the jar)
  • 1 cup maraschino cherries, drained and chopped
  • 1/2 cup milk
  • 1/2 cup chopped walnuts or pecans (optional)

For the Glaze:

  • 1/2 cup powdered sugar
  • 1 tbsp maraschino cherry juice
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or bundt pan.
  2. In a medium bowl, combine the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Add the flour mixture to the wet ingredients in alternating additions with the maraschino cherry juice and milk, beginning and ending with the flour mixture. Mix until just combined.
  6. Fold in the chopped maraschino cherries and nuts (if using).
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. For the glaze: In a small bowl, mix the powdered sugar, cherry juice, and vanilla extract until smooth. Drizzle the glaze over the cooled cake.
  11. Slice, serve, and enjoy!
