- 1/2 cup maraschino cherry juice (from the jar)
- 1 cup maraschino cherries, drained and chopped
- 1/2 cup milk
- 1/2 cup chopped walnuts or pecans (optional)
For the Glaze:
- 1/2 cup powdered sugar
- 1 tbsp maraschino cherry juice
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or bundt pan.
- In a medium bowl, combine the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- Add the flour mixture to the wet ingredients in alternating additions with the maraschino cherry juice and milk, beginning and ending with the flour mixture. Mix until just combined.
- Fold in the chopped maraschino cherries and nuts (if using).
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- For the glaze: In a small bowl, mix the powdered sugar, cherry juice, and vanilla extract until smooth. Drizzle the glaze over the cooled cake.
