Description

A hearty and flavorful casserole combining seasoned ground beef, Fritos corn chips, and melted cheese, topped with fresh lettuce, tomatoes, salsa, and sour cream.


Ingredients

  • 1 1/2 pounds ground beef
  • 1/3 large onion, chopped
  • 1 small can green chilies
  • 1 can enchilada sauce
  • 2 ounces cream cheese
  • 1 bag Fritos corn chips
  • 1 bag shredded cheese (cheddar or Mexican blend)
  • 3/4 cup lettuce, shredded
  • 1/2 cup fresh tomato, diced
  • 16 ounces salsa
  • 8 ounces sour cream

Instructions

  • Brown the ground beef with the chopped onion in a skillet over medium heat. Drain excess fat if necessary.
  • Add green chilies, enchilada sauce, and cream cheese to the beef mixture. Stir until combined.
  • Layer Fritos in a 9×13-inch baking dish, then spread the meat mixture over the chips. Top with shredded cheese.
  • Preheat the oven to 350°F (175°C) and bake for 15-20 minutes until the cheese is melted.
  • Serve topped with lettuce, tomatoes, salsa, and sour cream.

Notes

  • Optional to add jalapeños for extra spice.
  • Can substitute ground turkey for a leaner option.
