A hearty and flavorful casserole combining seasoned ground beef, Fritos corn chips, and melted cheese, topped with fresh lettuce, tomatoes, salsa, and sour cream.

- 1 1/2 pounds ground beef
- 1/3 large onion, chopped
- 1 small can green chilies
- 1 can enchilada sauce
- 2 ounces cream cheese
- 1 bag Fritos corn chips
- 1 bag shredded cheese (cheddar or Mexican blend)
- 3/4 cup lettuce, shredded
- 1/2 cup fresh tomato, diced
- 16 ounces salsa
- 8 ounces sour cream
Instructions
- Brown the ground beef with the chopped onion in a skillet over medium heat. Drain excess fat if necessary.
- Add green chilies, enchilada sauce, and cream cheese to the beef mixture. Stir until combined.
- Layer Fritos in a 9×13-inch baking dish, then spread the meat mixture over the chips. Top with shredded cheese.
- Preheat the oven to 350°F (175°C) and bake for 15-20 minutes until the cheese is melted.
- Serve topped with lettuce, tomatoes, salsa, and sour cream.
Notes
- Optional to add jalapeños for extra spice.
- Can substitute ground turkey for a leaner option.
