Description

Delight in the perfect combination of sweet and savory with these roasted sweet potatoes topped with a rich walnut-maple mixture and creamy goat cheese. This dish makes a wonderful side for any meal or a tasty vegetarian option.

  • 3 medium sweet potatoes
  • 1/3 cup melted unsalted butter
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/3 cup maple syrup (+ 2 tablespoons)
  • 1/3 cup chopped walnuts
  • 1 teaspoon thyme
  • 1/2 teaspoon cinnamon
  • 3 oz goat cheese (crumbled)

Instructions

  • Clean and slice the sweet potatoes into 1/2-inch rounds, keeping the skin on or peeling as preferred.
  • Preheat your oven to 200Β°C / 400Β°F.
  • Toss the sweet potato slices in a bowl with melted butter, cinnamon, salt, and pepper, or mix in a ziplock bag by shaking it well.
  • Arrange the slices on a baking tray in a single layer, leaving space for browning. Bake for 25-30 minutes until fork-tender; baking time may vary with slice thickness.
  • While baking, combine maple syrup, chopped walnuts, cinnamon, and thyme in a bowl.
  • After baking, remove the tray from the oven and top each sweet potato slice with about 1 teaspoon of the walnut-maple mixture.
  • Return to the oven and bake for another 8-10 minutes.
  • Once finished, sprinkle crumbled goat cheese over the warm roasted sweet potatoes.
  • Serve as is or with an extra drizzle of maple syrup on top, if desired!
