Description

These vibrant Watermelon Fries with a zesty Coconut Lime Dip are a refreshing, no-cook snack that’s as fun to eat as it is delicious. A perfect guilt-free treat for summer vibes!

Ingredients

Scale
  • 1 medium seedless watermelon (about 56 lbs), rind removed, cut into fry-like sticks
  • 1 tbsp lime zest (for sprinkling)
  • 1 tsp chili powder (optional, for a kick)
    Coconut Lime Dip:
  • 1/2 cup coconut cream (from a can, chilled)
  • 1/4 cup coconut yogurt (unsweetened)
  • Zest and juice of 1 lime (about 1 tsp zest, 2 tbsp juice)
  • 2 tsp honey or agave (optional, for sweetness)

Instructions

  1. Slice the watermelon into 1-inch thick rounds, remove the rind, and cut into fry-shaped sticks (about 1-inch wide by 3-4 inches long).
  2. Arrange the watermelon fries on a platter and sprinkle with lime zest and a light dusting of chili powder (if using).
  3. For the dip, scoop the thick coconut cream from a chilled can into a bowl. Add coconut yogurt, lime zest, lime juice, and honey or agave (if using). Whisk until smooth and creamy.
  4. Serve the watermelon fries chilled with the coconut lime dip alongside. Dig in right away!

Notes

  • Chill the watermelon fries in the fridge for 30 minutes before serving for extra refreshment.
  • Swap chili powder with Tajin or smoked paprika for different flavor profiles.
  • Store leftover fries in an airtight container in the fridge for up to 2 days (best fresh). Keep dip refrigerated for up to 5 days; stir before reusing.
