Coconut Lime Dip: - 1/2 cup coconut cream (from a can, chilled)
- 1/4 cup coconut yogurt (unsweetened)
- Zest and juice of 1 lime (about 1 tsp zest, 2 tbsp juice)
- 2 tsp honey or agave (optional, for sweetness)
Instructions
- Slice the watermelon into 1-inch thick rounds, remove the rind, and cut into fry-shaped sticks (about 1-inch wide by 3-4 inches long).
- Arrange the watermelon fries on a platter and sprinkle with lime zest and a light dusting of chili powder (if using).
- For the dip, scoop the thick coconut cream from a chilled can into a bowl. Add coconut yogurt, lime zest, lime juice, and honey or agave (if using). Whisk until smooth and creamy.
- Serve the watermelon fries chilled with the coconut lime dip alongside. Dig in right away!
