Description

Ingredients

  • 1 cup watermelon juice (freshly blended and strained)
  • 2 grams sodium alginate
  • 500 ml water (divided)
  • 5 grams calcium lactate
  • 2 tablespoons sugar (optional, adjust sweetness)

Instructions

  1. In a blender, combine watermelon juice and sodium alginate. Blend until completely dissolved and no clumps remain. Let the mixture rest for 15 minutes to remove air bubbles.
  2. In a separate bowl, dissolve calcium lactate in 500 ml water to create the calcium bath.
  3. Using a syringe or dropper, carefully drop small spheres of the watermelon mixture into the calcium bath.
  4. Let the spheres sit for 1-2 minutes to form a thin gel skin.
  5. Remove the boba with a slotted spoon and rinse gently in clean water.
  6. Store the popping boba in a container with some watermelon juice or flavored syrup until ready to serve.
