- 1 ½ cups cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 clove garlic, minced
- 1 teaspoon fresh basil, chopped (or ½ teaspoon dried)
- ½ teaspoon salt
- ¼ teaspoon black pepper
For the Bread:
- 1 baguette, sliced
- 2 tablespoons olive oil (for brushing)
- 1 garlic clove, cut in half (for rubbing)
Instructions
- Make the Whipped Feta:
In a food processor, blend feta, cream cheese, olive oil, lemon juice, honey, and garlic until smooth and creamy. Transfer to a bowl and set aside. - Marinate the Tomatoes:
In a bowl, toss cherry tomatoes with olive oil, balsamic vinegar, garlic, basil, salt, and pepper. Let sit for at least 15 minutes to absorb the flavors. - Prepare the Bread:
Preheat oven to 400°F (200°C).
Brush baguette slices with olive oil and place on a baking sheet.
Bake for 8-10 minutes, flipping halfway, until golden and crisp.
While warm, rub the tops lightly with a cut garlic clove for extra flavor. - Assemble the Bruschetta:
Spread a generous layer of whipped feta on each toasted baguette slice.
Top with marinated tomatoes and drizzle with extra balsamic if desired. - Serve & Enjoy:
