Description

A creamy, tangy whipped feta spread topped with juicy marinated tomatoes on crispy toasted bread—perfect for an appetizer or light snack!

Ingredients

Scale

For the Whipped Feta:

  • 8 oz feta cheese (block, not crumbled)
  • 4 oz cream cheese, softened
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon honey
  • 1 garlic clove, minced (optional)

For the Tomato Topping:

  • 1 ½ cups cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic, minced
  • 1 teaspoon fresh basil, chopped (or ½ teaspoon dried)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Bread:

  • 1 baguette, sliced
  • 2 tablespoons olive oil (for brushing)
  • 1 garlic clove, cut in half (for rubbing)

Instructions

  1. Make the Whipped Feta:
In a food processor, blend feta, cream cheese, olive oil, lemon juice, honey, and garlic until smooth and creamy. Transfer to a bowl and set aside.
  2. Marinate the Tomatoes:
In a bowl, toss cherry tomatoes with olive oil, balsamic vinegar, garlic, basil, salt, and pepper. Let sit for at least 15 minutes to absorb the flavors.
  3. Prepare the Bread:
    Preheat oven to 400°F (200°C).
Brush baguette slices with olive oil and place on a baking sheet.
Bake for 8-10 minutes, flipping halfway, until golden and crisp.
While warm, rub the tops lightly with a cut garlic clove for extra flavor.
  4. Assemble the Bruschetta:
Spread a generous layer of whipped feta on each toasted baguette slice.
Top with marinated tomatoes and drizzle with extra balsamic if desired.
  5. Serve & Enjoy:
Garnish with extra basil leaves or cracked black pepper. Serve immediately and enjoy the perfect blend of creamy, tangy, and crunchy textures!

Notes

  • For a smoother texture, make sure the cream cheese is softened before blending.
  • You can use store-bought baguette or make your own for a more homemade touch.
  • The whipped feta can be made ahead of time and stored in the fridge for up to 2 days.
