In a medium-sized saucepan, combine butter, sugar, heavy cream, and salt. Heat over medium-high heat, stirring frequently, until the sugar and butter have melted and the mixture begins to boil. Attach a candy thermometer and continue cooking, stirring often, until the mixture reaches 235°F (soft-ball stage). - Combine and Add Flavorings:
Remove the saucepan from the heat. Slowly stir in the white chocolate chips and marshmallow cream until fully melted and smooth. Add the pink food coloring (if desired) and stir to incorporate. - Add Cherries and Set the Fudge:
Fold in the chopped cherries, ensuring they are evenly distributed throughout the fudge. Pour the fudge mixture into the prepared pan and spread it into an even layer. Allow the fudge to set at room temperature for 3-4 hours or until firm. - Slice and Serve:
Once set, lift the fudge out of the pan using the parchment paper overhang. Cut into 1-inch squares and serve.
