- 2 cups all-purpose flour
- 1/2 cup cornstarch
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup white chocolate chips
- 1/2 cup dried cherries, chopped (or fresh cherries, chopped and pitted)
- 1–2 tbsp milk (if needed for dough consistency)
Instructions
- Preheat your oven to 325°F (163°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cornstarch, and salt.
- In a large bowl, cream together the butter and powdered sugar until light and fluffy.
- Add the vanilla extract and mix to combine.
- Gradually add the dry ingredients to the butter mixture and mix until the dough just comes together. If the dough is too dry, add a tablespoon of milk at a time until it holds together.
- Gently fold in the white chocolate chips and chopped cherries.
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet and gently press them down to flatten slightly.
- Bake for 10-12 minutes or until the edges of the cookies are lightly golden.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- If using fresh cherries, make sure to dry them well before chopping to avoid excess moisture in the dough.
- You can dip the baked cookies in additional melted white chocolate for an extra touch of sweetness and decoration.
