Description

These delicate shortbread cookies are packed with the sweet flavors of white chocolate and tart cherries, creating the perfect balance of richness and fruitiness. With a buttery texture and a hint of vanilla, these cookies are a delightful treat for any occasion.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup white chocolate chips
  • 1/2 cup dried cherries, chopped (or fresh cherries, chopped and pitted)
  • 12 tbsp milk (if needed for dough consistency)

Instructions

  1. Preheat your oven to 325°F (163°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cornstarch, and salt.
  3. In a large bowl, cream together the butter and powdered sugar until light and fluffy.
  4. Add the vanilla extract and mix to combine.
  5. Gradually add the dry ingredients to the butter mixture and mix until the dough just comes together. If the dough is too dry, add a tablespoon of milk at a time until it holds together.
  6. Gently fold in the white chocolate chips and chopped cherries.
  7. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet and gently press them down to flatten slightly.
  8. Bake for 10-12 minutes or until the edges of the cookies are lightly golden.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • If using fresh cherries, make sure to dry them well before chopping to avoid excess moisture in the dough.
  • You can dip the baked cookies in additional melted white chocolate for an extra touch of sweetness and decoration.
  • These cookies can be stored in an airtight container for up to a week.
