These White Chocolate Strawberry Cheesecake Bites are the perfect sweet treat combining creamy cheesecake, juicy strawberries, and rich white chocolate. These bite-sized desserts are a great addition to any party or celebration!

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup heavy cream
- 1/2 cup white chocolate chips, melted
- 12–16 fresh strawberries, hulled and sliced
- Additional white chocolate, for drizzling (optional)
Instructions
- Prepare the crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
- Press the crumb mixture into the bottom of mini muffin tins or silicone molds to form a crust. Use the back of a spoon to press it down tightly. Chill the crusts in the refrigerator for about 15 minutes to set.
- Make the cheesecake filling: In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract with an electric mixer until smooth and creamy.
- In a separate small bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Assemble the bites: Spoon the cheesecake filling onto the chilled graham cracker crusts, filling each mold almost to the top. Smooth the tops with a spatula.
- Top with strawberries: Place a slice of fresh strawberry on top of each cheesecake bite.
- Drizzle with white chocolate: Drizzle melted white chocolate over the top of the cheesecake bites for an extra layer of sweetness and decoration.
- Refrigerate the cheesecake bites for at least 2 hours, or until firm.
- Serve: Once set, carefully remove the cheesecake bites from the molds and serve chilled. Enjoy!

- These cheesecake bites can be made ahead of time and stored in the fridge for up to 3 days.
- If you prefer a more indulgent flavor, use a mix of white and dark chocolate drizzle.
