Description

These White Chocolate Strawberry Truffles are the perfect combination of creamy white chocolate and sweet strawberry. They make an elegant and delicious treat for special occasions, holidays, or a sweet gift!


Ingredients

  • 1/2 cup heavy cream
  • 1/4 cup freeze-dried strawberries, crushed into powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional: additional crushed freeze-dried strawberries or white chocolate for rolling

Instructions

  1. Melt the White Chocolate: In a heatproof bowl, place the chopped white chocolate. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Pour the hot cream over the white chocolate and let it sit for 1-2 minutes to soften. Stir gently until the chocolate is fully melted and the mixture is smooth.

  2. Add Strawberry Flavor: Stir in the crushed freeze-dried strawberries, vanilla extract, and a pinch of salt into the melted chocolate mixture. Mix until everything is fully incorporated. The freeze-dried strawberries give the truffles a natural fruity flavor without excess moisture.

  3. Chill the Mixture: Cover the bowl with plastic wrap and refrigerate the mixture for about 2 hours, or until it has firmed up enough to scoop.

  4. Shape the Truffles: Once the mixture is firm, use a small cookie scoop or spoon to scoop out small portions of the mixture. Roll each portion into a ball between your palms to form smooth truffles.

  5. Coat the Truffles: Roll each truffle in crushed freeze-dried strawberries or melted white chocolate for a smooth, glossy finish. To make them extra festive, you can also roll them in additional crushed strawberries for a burst of color and flavor.

  6. Chill Again: Place the rolled truffles onto a baking sheet lined with parchment paper and refrigerate for another 30 minutes to set completely.

  7. Serve: Once set, the White Chocolate Strawberry Truffles are ready to enjoy! Store in an airtight container in the fridge for up to a week.

Notes

  • If you can’t find freeze-dried strawberries, you can use fresh strawberries, but you’ll need to puree and strain them to remove moisture. Fresh strawberries can also affect the texture of the truffles.
