These White Chocolate Strawberry Truffles are the perfect combination of creamy white chocolate and sweet strawberry. They make an elegant and delicious treat for special occasions, holidays, or a sweet gift!
Ingredients
- 8 oz (225g) white chocolate, chopped
- 1/2 cup heavy cream
- 1/4 cup freeze-dried strawberries, crushed into powder
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Optional: additional crushed freeze-dried strawberries or white chocolate for rolling

Melt the White Chocolate: In a heatproof bowl, place the chopped white chocolate. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Pour the hot cream over the white chocolate and let it sit for 1-2 minutes to soften. Stir gently until the chocolate is fully melted and the mixture is smooth.

Add Strawberry Flavor: Stir in the crushed freeze-dried strawberries, vanilla extract, and a pinch of salt into the melted chocolate mixture. Mix until everything is fully incorporated. The freeze-dried strawberries give the truffles a natural fruity flavor without excess moisture.

Chill the Mixture: Cover the bowl with plastic wrap and refrigerate the mixture for about 2 hours, or until it has firmed up enough to scoop.

Shape the Truffles: Once the mixture is firm, use a small cookie scoop or spoon to scoop out small portions of the mixture. Roll each portion into a ball between your palms to form smooth truffles.

- If you can’t find freeze-dried strawberries, you can use fresh strawberries, but you’ll need to puree and strain them to remove moisture. Fresh strawberries can also affect the texture of the truffles.
