These Wild Blueberry Ricotta Sweet Buns are soft, pillowy, and bursting with fresh wild blueberries! The addition of ricotta cheese makes them extra moist and flavorful. Perfect for breakfast, brunch, or a sweet treat any time of day!

For the Dough:
- 3 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 packet (2 1/4 tsp) active dry yeast
- 1/2 tsp salt
- 1/2 cup whole milk, warmed
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 tsp vanilla extract
For the Ricotta Filling:
- 1 cup ricotta cheese
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup wild blueberries (fresh or frozen)
For the Glaze (optional):
- 1/4 cup powdered sugar
- 1–2 tbsp milk (adjust for consistency)
Instructions
- Prepare the Dough:
In a large mixing bowl, combine flour, sugar, yeast, and salt. In a separate bowl, whisk together the warm milk, melted butter, eggs, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until a dough forms.
Knead the dough on a lightly floured surface for about 5-7 minutes, until smooth and elastic. Alternatively, use a stand mixer with a dough hook attachment.
Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1-1.5 hours, or until it has doubled in size. - Prepare the Ricotta Filling:
In a medium bowl, mix together the ricotta cheese, powdered sugar, and vanilla extract until smooth.
Gently fold in the wild blueberries (if using frozen blueberries, don’t thaw them). Set aside. - Assemble the Buns:
Once the dough has risen, punch it down to release the air. Roll it out into a rectangle about 12×16 inches on a floured surface.
Spread the ricotta mixture evenly over the dough, leaving a small border around the edges.
Starting from the longer edge, tightly roll the dough into a log. Slice the log into 12 even pieces and arrange the buns in a greased 9×13-inch baking dish, leaving a little space between each one.
Cover the dish with a clean towel and let the buns rise for another 30 minutes. - Bake the Buns:
Preheat the oven to 350°F (175°C).
Bake the buns for 25-30 minutes, or until they are golden brown on top and cooked through. - Make the Glaze (optional):
While the buns are cooling, mix the powdered sugar and milk in a small bowl to create a smooth glaze. Drizzle the glaze over the buns once they’ve cooled slightly. - Serve and Enjoy:
Serve the buns warm or at room temperature. Enjoy with a cup of coffee or tea for the perfect brunch treat!
Notes
- If you prefer a stronger blueberry flavor, you can mix the blueberries directly into the dough instead of the ricotta mixture.
- For an extra touch of sweetness, sprinkle a bit of cinnamon sugar on top of the buns before baking.
- These buns are best enjoyed fresh, but can be stored in an airtight container for up to 2 days. Warm them slightly before serving.
