Description

  • 4 cups chicken broth or water

  • 1 can (10.5 oz) cream of mushroom soup

  • 1/2 cup crushed butter crackers or breadcrumbs (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Rinse the wild rice thoroughly, then place it in a pot with chicken broth or water. Bring to a boil, reduce heat, cover, and simmer for 40–45 minutes, or until the rice is tender but not mushy. Drain any excess liquid.
  3. In a large skillet, heat butter or oil over medium heat. Add the chopped onion, celery, and carrots. Sauté for 5–7 minutes until softened. Add the mushrooms and cook for another 5 minutes until they release their juices.
  4. In a large bowl, combine the cooked wild rice, sautéed vegetables, cooked chicken or beef (if using), cream of mushroom soup, sour cream, garlic powder, thyme, salt, and pepper. Mix well.
  5. Transfer the mixture to a greased 9×13-inch baking dish. Spread evenly. If desired, sprinkle with shredded cheese and crushed crackers or breadcrumbs.
  6. Bake uncovered for 30–35 minutes, or until hot and bubbling and the top is golden.
  7. Let it sit for 5–10 minutes before serving.
