Description

  • 6 large garlic cloves, finely chopped
  • 1 tablespoon salt
  • 1 lb dried squid ink spaghetti
  • ⅓ cup olive oil
  • 1 teaspoon crushed red pepper flakes
  • ½ cup reserved pasta cooking water (with an additional cup in case more is needed)

Instructions

  • Prepare the Pasta:
    • Bring a large pot of water to a boil. Add the salt and cook the squid ink spaghetti according to the package instructions until al dente.
  • Prepare the Garlic Oil Sauce:
    • While the pasta is cooking, heat the olive oil in a large pan over low heat.
    • Add the finely chopped garlic and cook gently for about 4 minutes, stirring frequently to avoid burning.
    • Stir in the crushed red pepper flakes and cook for another 30 seconds.
  • Create the Sauce Base:
    • Before draining the pasta, remove ½ cup of the pasta cooking water and add it carefully to the garlic oil mixture in the pan. Let it simmer gently while the pasta finishes cooking.
  • Combine Pasta with Sauce:
    • Drain the cooked pasta, reserving another cup of the cooking water. Add the pasta to the garlic mixture and toss to coat evenly.
    • Add extra pasta water if needed to ensure the sauce evenly coats the pasta.
  • Serve:
    • Serve immediately for the best visual and flavor impact. Enjoy!
