These festive Wonton Taco Cups are perfect for game days, taco nights, or special celebrations like Cinco de Mayo! They’re baked, deliciously crunchy, and loaded with flavorful fillings.

- 1 pound extra-lean ground beef (or ground chicken)
- 2 tablespoons avocado oil (or olive oil)
- 1 envelope taco seasoning (about 2 tablespoons)
- 1 (10-ounce) can ROTEL diced tomatoes & green chilies, well drained
- Cooking spray (such as PAM® Spray Pump Avocado Oil)
- 36 wonton wrappers
- 2 cups shredded cheddar cheese (regular or reduced fat)
- 1 cup fresh tomatoes (Roma or grape), diced
- 1 cup sour cream (regular or reduced fat)
- 2 green onions, thinly sliced
- 18 medium-sized black olives
- Optional: Lime wedges for garnish
Instructions
- Preheat Oven: Adjust the oven rack to the middle position and preheat the oven to 400°F (200°C).
- Cook the Ground Beef: In a cast-iron pan over medium heat, add avocado oil and ground beef. Sprinkle taco seasoning over the meat and cook, breaking it up as it browns. Once fully cooked, remove from heat and add the drained ROTEL tomatoes. Mix until well combined.
- Prepare the Wonton Cups: Spray two muffin pans with cooking spray. Place a wonton wrapper in 18 wells of the pans. Add a tablespoon of the meat mixture into each wonton wrapper, then top with about two teaspoons of cheese. Place a second wonton wrapper over each taco cup, offsetting it slightly from the bottom layer. Repeat the layering of meat and cheese on top of the second wrapper.
- Bake the Taco Cups: Bake for approximately 8 minutes, keeping a close eye on them. The wonton wrappers should be golden brown, and the cheese should be fully melted.
- Garnish and Serve: Remove taco cups from the muffin pans. Garnish each cup with diced tomatoes, a dollop of sour cream, sliced green onions, and a black olive. Serve with lime wedges if desired.
Notes
For a healthier version, you can use ground turkey or chicken and low-fat cheese.
