- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup milk
- 1/4 cup unsweetened cocoa powder
- 1/2 cup boiling water
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan, or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, beat together the butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.
- Divide the batter into two equal portions. In one portion, stir in the cocoa powder and boiling water until smooth to make the chocolate batter. Leave the other portion as is for the vanilla batter.
- To create the zebra effect, spoon 1 tablespoon of vanilla batter into the center of the prepared pan. Then, spoon 1 tablespoon of chocolate batter on top of the vanilla batter. Repeat this process, alternating between vanilla and chocolate until all the batter is used. The batter should spread out on its own, creating the zebra pattern.
- Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Notes
- If you want to add a little extra sweetness, drizzle a simple glaze over the cake once it has cooled.
- The cake is best served the same day, but it will stay fresh for a couple of days if stored in an airtight container.
