- 12 oz cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/4 cup fresh basil, chopped
- 1/2 cup Italian dressing (store-bought or homemade)
- Salt and pepper, to taste
Instructions
- Cook tortellini according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine cooked tortellini, cherry tomatoes, cucumber, bell pepper, red onion, olives, and basil.
- Add Italian dressing and toss gently to coat all ingredients.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving to let flavors meld.
- Serve cold or at room temperature.

- Feel free to add grilled chicken or salami for extra protein.
