Description

A vibrant and flavorful pasta salad featuring cheese-filled tortellini, fresh vegetables, and a tangy Italian dressing — perfect for picnics and potlucks.


Ingredients

  • 12 oz cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/4 cup fresh basil, chopped
  • 1/2 cup Italian dressing (store-bought or homemade)
  • Salt and pepper, to taste

Instructions

  1. Cook tortellini according to package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine cooked tortellini, cherry tomatoes, cucumber, bell pepper, red onion, olives, and basil.
  3. Add Italian dressing and toss gently to coat all ingredients.
  4. Season with salt and pepper to taste.
  5. Chill in the refrigerator for at least 30 minutes before serving to let flavors meld.
  6. Serve cold or at room temperature.
