Ingredients

Scale

For the Muffins:

  • 2 cups All-Purpose Flour
  • 1/2 cup Granulated Sugar
  • 2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/4 cup Unsalted Butter (melted)
  • 1/2 cup Buttermilk (or whole milk)
  • 1 Large Egg
  • 1/2 cup Fresh Orange Juice
  • 1 tbsp Orange Zest (from about 1 orange)
  • 1 tsp Vanilla Extract

For the Glaze (optional):

  • 1/4 cup Powdered Sugar
  • 1 tbsp Fresh Orange Juice
  • 1/4 tsp Orange Zest

Instructions

  1. Prepare the Oven and Muffin Tin:
    • Preheat your oven to 375°F (190°C).
    • Line a muffin tin with paper liners or lightly grease it with cooking spray.
  2. Mix the Dry Ingredients:
    • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Combine the Wet Ingredients:
    • In another bowl, whisk together the melted butter, buttermilk, egg, orange juice, orange zest, and vanilla extract until well combined.
  4. Mix the Wet and Dry Ingredients:
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as that can lead to dense muffins.
  5. Fill the Muffin Tin:
    • Divide the batter evenly among the muffin cups, filling each about 3/4 of the way full.
  6. Bake:
    • Bake for 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Make the Glaze (Optional):
    • While the muffins are cooling, whisk together the powdered sugar, orange juice, and orange zest in a small bowl until smooth.
  8. Glaze the Muffins:
    • Once the muffins have cooled for a few minutes, drizzle the glaze over the top of each muffin for an extra burst of citrus flavor.
  9. Serve:
    • Allow the muffins to cool slightly, then enjoy them warm or at room temperature!

Notes

  • For a slightly more intense orange flavor, you can add a bit more orange zest to the batter or glaze.
  • These muffins freeze well! Allow them to cool completely, then wrap them tightly and freeze for up to 3 months.
  • If you don’t have buttermilk, you can substitute with regular milk or make your own by adding a tablespoon of lemon juice or vinegar to the milk and letting it sit for 5 minutes.
