For the fritters:

  • 2 medium zucchinis, grated
  • 1/2 cup (75g) crumbled feta cheese
  • 1/2 cup (60g) fresh spinach, chopped
  • 1/2 small onion, finely chopped
  • 1 large egg, beaten
  • 1/4 cup (30g) all-purpose flour
  • 1/4 cup (30g) breadcrumbs (optional for extra crunch)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil (for frying)

For the garlic tzatziki:

  • 1/2 cup (120g) Greek yogurt
  • 1 small cucumber, grated and excess moisture squeezed out
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp fresh dill, chopped (optional)
  • Salt and pepper to taste

Instructions

  1. To make the fritters, place the grated zucchini in a clean kitchen towel and squeeze out the excess moisture.
  2. In a large bowl, combine the zucchini, feta cheese, spinach, onion, egg, flour, breadcrumbs (if using), salt, and pepper. Mix well until fully combined.
  3. Heat olive oil in a large skillet over medium heat.
  4. Scoop spoonfuls of the mixture into the pan, flattening them slightly to form fritters. Cook for 3-4 minutes on each side, or until golden brown and crispy.
  5. Remove the fritters from the pan and set them aside on a plate lined with paper towels to absorb any excess oil.
  6. To make the garlic tzatziki, combine the Greek yogurt, grated cucumber, olive oil, garlic, lemon juice, and dill (if using) in a small bowl. Stir well and season with salt and pepper to taste.
  7. Serve the fritters warm with a generous dollop of garlic tzatziki on top or on the side.

Notes

  • For extra crispiness, you can bake the fritters in a preheated oven at 375°F (190°C) for 15-20 minutes, flipping halfway through.
  • These fritters are great for meal prep and can be stored in the fridge for up to 3 days. Reheat in a skillet or oven for best results.
