For the fritters:
- 2 medium zucchinis, grated
- 1/2 cup (75g) crumbled feta cheese
- 1/2 cup (60g) fresh spinach, chopped
- 1/2 small onion, finely chopped
- 1 large egg, beaten
- 1/4 cup (30g) all-purpose flour
- 1/4 cup (30g) breadcrumbs (optional for extra crunch)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil (for frying)
For the garlic tzatziki:
- 1/2 cup (120g) Greek yogurt
- 1 small cucumber, grated and excess moisture squeezed out
- 1 tbsp olive oil
- 1 garlic clove, minced
- 1 tbsp fresh lemon juice
- 1 tsp fresh dill, chopped (optional)
- Salt and pepper to taste
Instructions
- To make the fritters, place the grated zucchini in a clean kitchen towel and squeeze out the excess moisture.
- In a large bowl, combine the zucchini, feta cheese, spinach, onion, egg, flour, breadcrumbs (if using), salt, and pepper. Mix well until fully combined.
- Heat olive oil in a large skillet over medium heat.
- Scoop spoonfuls of the mixture into the pan, flattening them slightly to form fritters. Cook for 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the pan and set them aside on a plate lined with paper towels to absorb any excess oil.
- To make the garlic tzatziki, combine the Greek yogurt, grated cucumber, olive oil, garlic, lemon juice, and dill (if using) in a small bowl. Stir well and season with salt and pepper to taste.
- Serve the fritters warm with a generous dollop of garlic tzatziki on top or on the side.
Notes
- For extra crispiness, you can bake the fritters in a preheated oven at 375°F (190°C) for 15-20 minutes, flipping halfway through.
- These fritters are great for meal prep and can be stored in the fridge for up to 3 days. Reheat in a skillet or oven for best results.
- You can add other herbs, such as mint or parsley, to the tzatziki for variation.
