Description

  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×9-inch baking dish with olive oil or cooking spray.
  2. Arrange the zucchini slices in a single layer at the bottom of the prepared baking dish. Season with salt, pepper, and garlic powder.
  3. Drizzle half of the pesto sauce over the zucchini slices, ensuring they are evenly coated.
  4. Sprinkle half of the grated Parmesan and shredded mozzarella cheeses over the zucchini.
  5. Repeat the process with another layer of zucchini, the remaining pesto sauce, and the remaining cheeses.
  6. Cover the baking dish with foil and bake for 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
  7. Remove the foil and bake for an additional 5-10 minutes, or until the top is golden and slightly crispy.
