Description

Zucchini Pizza Boats are a low-carb, healthy twist on traditional pizza! Fresh zucchini is hollowed out and filled with marinara sauce, cheese, and your favorite pizza toppings. Baked to perfection, these make for a fun and guilt-free meal or snack.


Ingredients

  • 4 medium zucchinis, halved lengthwise and seeds scooped out
  • 1 cup marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup pepperoni slices or other preferred toppings (e.g., mushrooms, bell peppers, olives)
  • 1/2 tsp dried oregano
  • 1/4 tsp garlic powder
  • Salt and pepper, to taste
  • Fresh basil, chopped (for garnish, optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Slice the zucchinis in half lengthwise and scoop out the center to create boats. Season the zucchini halves with a little salt and pepper.
  3. Spread a spoonful of marinara sauce into each zucchini boat, making sure to coat the bottom evenly.
  4. Top with shredded mozzarella cheese and your choice of toppings, such as pepperoni, mushrooms, or bell peppers.
  5. Sprinkle with oregano and garlic powder for extra flavor.
  6. Place the zucchini boats on the prepared baking sheet and bake for 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
