Zucchini Pizza Boats are a low-carb, healthy twist on traditional pizza! Fresh zucchini is hollowed out and filled with marinara sauce, cheese, and your favorite pizza toppings. Baked to perfection, these make for a fun and guilt-free meal or snack.

- 4 medium zucchinis, halved lengthwise and seeds scooped out
- 1 cup marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup pepperoni slices or other preferred toppings (e.g., mushrooms, bell peppers, olives)
- 1/2 tsp dried oregano
- 1/4 tsp garlic powder
- Salt and pepper, to taste
- Fresh basil, chopped (for garnish, optional)
Instructions
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- Slice the zucchinis in half lengthwise and scoop out the center to create boats. Season the zucchini halves with a little salt and pepper.
- Spread a spoonful of marinara sauce into each zucchini boat, making sure to coat the bottom evenly.
- Top with shredded mozzarella cheese and your choice of toppings, such as pepperoni, mushrooms, or bell peppers.
- Sprinkle with oregano and garlic powder for extra flavor.
- Place the zucchini boats on the prepared baking sheet and bake for 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
- Once baked, remove from the oven and garnish with fresh basil, if desired. Serve immediately and enjoy!
Notes
- For a vegetarian option, skip the pepperoni and load the boats with extra veggies like spinach, olives, or artichokes.
- If you prefer your zucchini boats extra crispy, broil them for the last 2-3 minutes of baking.
- You can make these ahead of time and store them in the fridge for up to 2 days. Reheat in the oven for 10 minutes at 375°F.
