A comforting and easy Chicken Cobbler made with rotisserie chicken, mixed vegetables, and a buttery biscuit topping. Perfect for family dinners or cozy gatherings!

- 1/2 cup melted butter
- 4 cups cooked chicken (rotisserie chicken is convenient)
- 1 (14-ounce) bag frozen mixed vegetables
- 1 (11.4-ounce) box Cheddar Bay Biscuit mix
- 2 cups milk
- 1 cup chicken broth
- 1 (10.5-ounce) can cream of chicken soup
- Optional seasonings: 1 teaspoon garlic powder, 1 teaspoon dried thyme
- Optional cheese layer: 1 1/2 cups grated cheddar cheese
Instructions
- Preheat oven: Preheat your oven to 375°F (190°C).
- Prepare baking dish: Pour the melted butter into the bottom of a 9×13 inch baking dish.
- Layer ingredients: Layer the cooked chicken on top of the butter, then evenly layer the frozen vegetables over the chicken.
- Make biscuit mixture: In a large bowl, whisk together the biscuit mix (with the seasoning packet) and the milk until mostly smooth. Some small lumps are okay.
- Add creamy sauce: Pour the biscuit mixture over the vegetables. In the same bowl, whisk together the chicken broth and cream of chicken soup. Pour this mixture over the biscuit mixture.
- Bake: Bake for 1 hour, or until golden brown and the center is almost set but still slightly loose. If overbaked, there won’t be as much gravy, but it will still be delicious.
- Serve: Let the dish cool for 10-15 minutes before serving.
Notes
- For extra flavor, consider adding herbs or spices of your choice.
- If you prefer a cheesier cobbler, sprinkle the optional cheddar cheese on top before baking.
