Description

These soft and chewy lemon cookies are bursting with fresh citrus flavor and are perfect for the holiday season. Lightly golden on the edges with a dusting of powdered sugar, they’re a delightful treat for Christmas.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tsp grated lemon zest (from fresh lemons)
  • 1 tsp vanilla extract
  • Powdered sugar, for dusting

Instructions

  • Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a large bowl, cream the softened butter and sugar until light and fluffy, using a hand mixer or stand mixer.
  • Add the eggs one at a time, beating well after each addition.
  • Stir in the lemon juice, lemon zest, and vanilla extract until evenly combined.
  • Gradually mix the dry ingredients into the wet mixture, stirring until just combined. Be careful not to overmix.
  • Drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely. Dust generously with powdered sugar.

Notes

For a sweeter finish, add more powdered sugar before serving. These cookies can also be stored in an airtight container for up to one week.
