- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 2 tbsp lemon juice (freshly squeezed)
- 2 tsp grated lemon zest (from fresh lemons)
- 1 tsp vanilla extract
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream the softened butter and sugar until light and fluffy, using a hand mixer or stand mixer.
- Add the eggs one at a time, beating well after each addition.
- Stir in the lemon juice, lemon zest, and vanilla extract until evenly combined.
- Gradually mix the dry ingredients into the wet mixture, stirring until just combined. Be careful not to overmix.
- Drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely. Dust generously with powdered sugar.
Notes
For a sweeter finish, add more powdered sugar before serving. These cookies can also be stored in an airtight container for up to one week.
