For the crust:
- 2 cups chocolate cookie crumbs
- 1/4 cup melted butter
For the filling:
- 4 cups strawberry ice cream
- 1 cup whipped cream
- 1/2 cup rainbow sprinkles
- 1/2 cup Nerds candy (or your favorite colorful candies)

- 1 cup whipped cream
- 1/4 cup extra rainbow sprinkles
- 1/4 cup Nerds candy
Instructions
- Prepare the crust: Mix the chocolate cookie crumbs with melted butter in a medium bowl. Press the mixture into the bottom of a 9-inch springform pan. Place in the freezer for 10–15 minutes to set.
- Make the ice cream layer: In a large bowl, soften the strawberry ice cream until it’s spreadable but not melted. Fold in 1/2 cup whipped cream and 1/2 cup rainbow sprinkles. Spread the mixture evenly over the chilled crust.
- Add the topping: Spread the remaining whipped cream over the ice cream layer. Sprinkle with extra rainbow sprinkles and Nerds candy.
- Freeze: Freeze the cake for at least 4 hours, or until completely set.
- Serve: Remove the cake from the springform pan and slice into servings.
