Description

Shrimp and Creamed Corn is a deliciously creamy, comforting dish that combines succulent shrimp with a rich, savory creamed corn sauce. Perfect as a side dish or a main course, this meal is packed with flavor and is incredibly easy to prepare.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 4 cups fresh or frozen corn kernels
  • 1/2 cup heavy cream
  • 1/4 cup whole milk
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional, for heat)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil and butter in a large skillet over medium heat. Once melted, add the chopped onion and cook for 3-4 minutes, or until softened. Add the garlic and cook for another 30 seconds, until fragrant.
  2. Add the corn to the skillet and cook for 5 minutes, stirring occasionally.
  3. Pour in the heavy cream and milk, then stir in the paprika, cayenne (if using), and salt and pepper to taste. Bring the mixture to a simmer and cook for 3-4 minutes until the cream thickens slightly.
  4. While the corn mixture is simmering, heat another skillet over medium-high heat. Add a little olive oil and cook the shrimp for 2-3 minutes per side, or until pink and opaque. Season the shrimp with salt, pepper, and a pinch of paprika.
  5. Once the shrimp are cooked, add them to the creamed corn mixture and stir to combine.
  6. Continue to cook for an additional 2-3 minutes to heat everything through and let the flavors meld together.
  7. Garnish with freshly chopped parsley before serving. Serve as a main dish with rice, cornbread, or a light salad, or as a hearty side dish.

Notes

  • For extra flavor, add a squeeze of fresh lemon juice just before serving.
  • You can use frozen shrimp for convenience, but be sure to thaw them before cooking.
  • If you like a bit of extra spice, feel free to add more cayenne or a pinch of chili flakes to the creamed corn.
