Ingredients

  • 1 lb ground beef (or your choice of ground meat)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 green bell pepper, diced
  • 1 jalapeño, diced (optional, for heat)
  • 1 can (15 oz) red kidney beans, rinsed and drained (or pinto or black beans)
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (15 oz) tomato sauce
  • 1 cup beef or chicken broth (or 1/2 cup beer and 1/2 cup broth for added flavor)
  • Salt and pepper, to taste

Instructions

  • Cook the Beef
    In a large pot over medium heat, cook the ground beef, onion, garlic, and half of the chili powder until the beef is browned and fully cooked. Drain any excess fat.
  • Add Ingredients
    Add the remaining chili powder, cumin, bell pepper, jalapeño (if using), kidney beans, diced tomatoes, tomato sauce, and broth (or beer/broth mixture). Stir to combine.
  • Simmer
    Bring the chili to a boil, then reduce the heat and let it simmer uncovered for 45-60 minutes, stirring occasionally, until thickened. If needed, adjust seasoning with salt and pepper to taste.
  • Serve
    Ladle the chili into bowls and top with your favorite toppings like shredded cheese, sour cream, chopped onions, and tortilla chips.

  • For a vegetarian version, substitute ground beef with lentils or a meat alternative.
